4 Summer Lunch Ideas for Kids

Hooray, it’s summer! It’s an active season full of outside days with your buddies. Make sure to fuel up with these delicious recipes! Try any of these summer lunch ideas for kids.

Peachy Castle Sandwich

Summer is the season of castles! Sandcastles at the beach, peachy castles, you name it.

Prep time: 10 minutes | Cook time: 5 minutes | Servings: 3 sandwiches

Ingredients:

  • 6 slices whole wheat bread
  • 1 ½ cups red lettuce
  • 1 cup mozzarella, shredded
  • 2 peaches, cut into wedges

Materials:

  • Oven
  • Parchment paper
  • Baking tray
  • Toothpicks

Directions:

  1. Preheat the oven to 300°F. Put parchment paper onto a baking tray.
  2. Start with 1 slice. Place the red lettuce and shredded mozzarella onto the slice. Place another slice on top.
  3. Repeat step 2 to make the other sandwiches.
  4. Place all sandwiches in the oven. Bake for 5 minutes or until bread turns golden-brown.
  5. Stack the sandwiches on top of each other.
  6. Stick a toothpick into each peach wedge.
  7. Stick the toothpicks through the sandwich. Place some on the bread top. Try the sides too!

Tasty Tomato Pasta Soup

Tomatoes are in stock and ready for eating! Here’s a simple, yummy soup that everyone can enjoy.

Prep and cook time: 20 minutes | Servings: 4

Ingredients:

  • 2 tablespoons olive oil
  • 2 celery sticks, diced
  • 1 yellow onion, diced
  • 2 cans tomatoes, chopped
  • 1 ⅔ cups vegetable stock
  • ⅔ cup pasta, any shape
  • Handful of basil leaves
  • ½ cup parmesan cheese, grated

Materials:

  • Stove
  • Pot
  • Stirring spoon

Directions:

  1. Cook the olive oil, celery, and onion in a pot for 5 minutes.
  2. Put in the tomatoes and vegetable stock. Stir until the mixture boils.
  3. Put in the pasta and let it cook on medium heat. Stir occasionally for 8 minutes or until the pasta has softened.
  4. After serving the soup, sprinkle the basil leaves and parmesan cheese.

Fruit Cubes

Let these sweet cubes accompany your lunch. Enjoy summer fruits in a cool (literally cool) way.

Prep time: 15 minutes | Freeze time: 5 hours | Servings: 12 cubes

Ingredients:

  • 2/3 cup watermelon, cut into pieces
  • 2/3 cup mango, cut into pieces
  • 2/3 cup kiwis, peeled

Materials:

  • Blender
  • 3 cups
  • 12-hole ice cube tray
  • Freezer

Directions:

  1. Blend each fruit separately until smooth. Place each fruit smoothie into its own cup.
  2. Get an ice cube tray with 12 holes. Pour each fruit into 4 holes.
  3. Put the tray into the freezer. Freeze for 5 hours, overnight, or until solid.
  4. When ready to eat, remove the frozen fruit cubes from the tray. Let the tray thaw for 1 minute to make removal easier.

Banana Smiles

Let the banana smile back at you!

Prep time: 10 minutes | Servings: 1 bowl

Ingredients:

  • ½ oat milk
  • ⅓ cup rolled oats
  • 2 tablespoons chia seeds
  • 2 cups frozen mixed berries
  • 2 bananas, sliced

Materials:

  • Blender
  • Big bowl

Directions:

  1. Put oat milk, rolled oats, chia seeds, 1 ¾ cups berries, and 1 banana into a blender. Blend until smooth.
  2. Pour the blend into a bowl.
  3. Get the banana slices from the other banana. Place them into a smiley face on the blend’s surface. Place one slice for each eye. Then, place other slices for a curved smile!
  4. Place a whole berry onto each eye. This is the eye pupil.
