Chez Sandi Cheese Bites

Prep time: 10 minutes | Cook time: 20 minutes | Servings: 12 small muffins

Ingredients:

  • 1 cup cooked quinoa
  • ½ cup cheddar cheese, shredded
  • ⅓ cup broccoli, chopped into fine pieces
  • 1 egg
  • 1 garlic clove, minced
  • ¼ teaspoon ground mustard

Directions:

  1. Preheat the oven to 350°F.
  2. Spray the non-stick cooking spray over the mini-muffin pan.
  3. Place all ingredients into a bowl and mix well.
  4. Place two tablespoons of the mixture into each muffin cup. Press down on the mixture. 
  5. Bake for about 20 minutes, or until the muffin tops are a little brown.

Luckily, it takes a short time to cook these cheese bites. (Chez Sandi wants his food served quickly!)

Cafe Croissant Sandwiches

Prep time: 10 minutes | Cook time: 5 minutes | Servings: 6 sandwiches

Ingredients:

  • 6 mini-croissants
  • Mozzarella block
  • ¾ cup baby spinach

Directions:

  1. Preheat the oven to 350°F. Put parchment paper onto a baking tray.
  2. Cut the croissants into horizontal halves with a small knife. Don’t cut the croissants completely.
  3. Slice 6 mozzarella slices. Put one slice into each croissant.
  4. Place the croissants onto the baking tray. Bake for 5 minutes or until the croissants become golden brown.
  5. Take the croissants out of the oven. Place baby spinach into each croissant.

These croissant sandwiches are classy. They are inspired by the croissant treats in our island’s Cafe!

Tortilla Wrap for Your Sack

Prep time: 5 minutes | Servings: 1 wrap

Ingredients:

  • 1 8-inch whole-wheat tortilla
  • 4 tablespoons cream cheese
  • Rotisserie chicken
  • ⅓ cup romaine lettuce

Directions:

  1. Spread the cream cheese, then the romaine lettuce, over the tortilla.
  2. Cut off 6 small pieces from the rotisserie chicken.
  3. Place the chicken pieces along the bottom of the tortilla.
  4. Roll up the tortilla.

This rolled-up tortilla wrap fits easily in a lunch sack!
